The GFCF Recipe Experience: Banana Bread and Corn Bread Recipes

My kids love banana bread and corn bread. Here are the recipes we use.

Banana Bread

This recipe is for making the bread in a bread machine.


3 bananas, mashed
1/4 cup cf sour cream

1/2 cup oil
1/2 cup sugar
1/3 cup light brown sugar, packed
1/3 cup dark brown sugar, packed
1 tsp gfcf vanilla OR 1 tsp gfcf almond extract
2 large eggs

2 cups gf flour
1 tsp baking soda
1/2 tsp gf baking powder
1/2 tsp salt

Combine mashed bananas and sour cream and place into bread machine. Add remaining ingredients in the above order. Run machine on the quickbread setting. After a couple minutes of mixing, pause the mixing process and scrape down the sides. Resume mixing, and let the machine do the work until it is done!

Since I go to work early, I love getting everything started before I leave so the rest of the family wakes up to fresh baked banana bread.


This is a great recipe that we bake as muffins or as a flatbread. It is also a great base for my Thanksgiving stuffing.


1/4 cup shortening or oil
1 cup corn meal
1 cup gf flour
2 Tb sugar
1 Tb gf baking powder
1/2 tsp salt
1 cup cf milk or water
1 large egg, beaten

Preheat oven to 425 degrees. Combine dry ingredients in a bowl. Add liquid ingredients and stir until blended. Pour into greased muffin cups or a greased baking pan. Bake 20 to 25 minutes or until an inserted toothpick comes out clean (muffins may take a little less time).

An alternative method of making cornbread is to place the shortening/oil in a skillet and heat in the oven while combining the remaining ingredients as above, making sure that the skillet is completely coated. After combining the remaining ingredients add the hot shortening/oil and mix well. Pour into greased skillet and bake as above.

Either way, they are delicious!!!

Isn't the sour cream dairy??

We use Tofutti Sour Cream substitute, which is non-dairy and casein free.

Tofutti sour cream is CF but NOT GF. There are other sour cream alternatives that are both CF & GF though.

Thank you for your comment. I would like to know the source of your information. The response I saw from Tofutti is that they do not add any gluten to the recipe, but that does not mean the flavorings they purchase from other sources are gluten free. After looking at the label I saw nothing jump out at me to indicate what could possibly contain gluten. So I guess my question is: if there is gluten in Tofutti Sour Cream, where is it coming from?

Made this banana bread today. It was great. Moist, flavorful not at all crumbly. Loved it. My family who can eat wheat thought is was amazing. Thanks for the recipe. Can't wait to try the cornbread.
