This month's Adopt a GF Blogger event, hosted by Cheryl at Gluten Free Goodness, was the perfect storm of events coming together:
- Go the the Good Food Store with kids, who are craving zucchini bread, only to discover that they are out.
- Check out the blogroll, and discover that someone had recently posted about a zucchini bread recipe.
- Find out that zucchini is on sale at the local store.
- Adopt said blogger who had a zucchini bread recipe.
With all that in mind, I am pleased to present my adopted GF blogger this month - Lauren, at Celiac Teen.
Lauren was diagnosed with celiac disease in January, and began blogging about her experiences in April. What I love about Lauren is how determined she is, at such a young age, to take control of her life, and how well she has dived into her new world. Not to mention she also has a keen sense for fashion.
Lauren's zucchini bread recipe is simple and delicious. Here is my version:
The usual substitutions were made: I used 2 cups of Bob's Red Mill GF All-Purpose Flour instead of her mixture, and, since I needed to make this GFCF, I substituted an Earthbalance Buttery Stick for the butter stick.
The most important thing, though, is how the four resident critics liked it, and, I have to say, on a scale of one to four, this one rated a seven (the three older kids had seconds). So this is a definite winner, and one recipe I'd encourage you to try.
Lauren, I truly believe you are an inspiration, no just to teens, but to all celiacs. Keep up your enthusiasm and your determination. And thanks for a great recipe.
