Adopt a GF Blogger - Celiac Teen

This month's Adopt a GF Blogger event, hosted by Cheryl at Gluten Free Goodness, was the perfect storm of events coming together:

  1. Go the the Good Food Store with kids, who are craving zucchini bread, only to discover that they are out.
  2. Check out the blogroll, and discover that someone had recently posted about a zucchini bread recipe.
  3. Find out that zucchini is on sale at the local store.
  4. Adopt said blogger who had a zucchini bread recipe.

With all that in mind, I am pleased to present my adopted GF blogger this month - Lauren, at Celiac Teen.

Lauren was diagnosed with celiac disease in January, and began blogging about her experiences in April. What I love about Lauren is how determined she is, at such a young age, to take control of her life, and how well she has dived into her new world. Not to mention she also has a keen sense for fashion.

Lauren's zucchini bread recipe is simple and delicious. Here is my version:


The usual substitutions were made: I used 2 cups of Bob's Red Mill GF All-Purpose Flour instead of her mixture, and, since I needed to make this GFCF, I substituted an Earthbalance Buttery Stick for the butter stick.

The most important thing, though, is how the four resident critics liked it, and, I have to say, on a scale of one to four, this one rated a seven (the three older kids had seconds). So this is a definite winner, and one recipe I'd encourage you to try.

Lauren, I truly believe you are an inspiration, no just to teens, but to all celiacs. Keep up your enthusiasm and your determination. And thanks for a great recipe.
